The dining area at Yats is quite small and filled with a diverse group of people.  My favorite dish from here is typically the Chili Cheese Etouffee with Crawfish.  It was once again, very good today.  It starts with a layer of white rice, and then the sauce is added.  It’s a thicker, chili-cheese sauce with bits of Crawfish added in.  It is not too spicy at all, as I am one that tends to like things on the less spicy side.  I decided to try the Red Beans and Rice with sausage today as well.  It was good, but not quite as unique as the Etouffee.  The bites with the sausage were definitely the best, although the taste made me think of beenie-weenies for some reason.  This was another dish that wasn’t too spicy.  I didn’t think the bread was quite as good as normal today.  Normally, it’s a very greasy-buttery topping that is slathered on the top of the bread.  It’s almost like an oil that is still glistening on the top when it is served.  (Yes, it does seem unhealthy, but it is oh-so-good!)  Today, it just seemed like a pat of butter had been added to the top of the slice prior to toasting it.  However, it was good to layer some of that Etouffee on top of and have a bite!

Interested in creating your own Etouffee?  I ran across this blog with all sorts of New Orleans inspired recipes.  Click here for the Shrimp Etouffee.  If you get all excited and even want to go with a dessert that goes along, try the Beignet recipe!
